Whole squash is roasted in imitation of butter, maple syrup, and cream, later mashed into a sweet and savory side dish.

  • 1 butternut squash medium
  • 2 tablespoons butter
  • 2 tablespoons maple syrup
  • 2 tablespoons stuffy cream
  • 1 4 teaspoon pumpkin pie spice optional
  • 1 2 teaspoon salt lead pro more to taste

  • preheat the oven to 400u00b0f
  • line a large baking sheet with parchment paper set aside

  • check to see that squash is done remove from oven or add time as needed allow squash to rest until cool enough to handle about 10 minutes
  • use a spoon to scoop the flesh of squash and maple butter into a large mixing bowl discard the skins with a potato masher or large fork mash squash until smooth season with the salt and black pepper
  • serve immediately
